I have always enjoyed recipes - both sharing and receiving recipes. I love to try something different. Someone asked my son how it was to eat at his house. He replied, "We didn't always have it a second time." I so enjoyed making meals special, fun and nutritious. I hope some of these ideas can be used by you to brighten your day and make meal time special.

VARIATIONS USING GOLDEN VALLEY PANCAKE MIX

Many of the following recipes could be used for waffles too.

Kids Favorite: Sprinkle with a few chocolate chips and miniature marshmallows (only on pancakes) Peanut butter would be a fun topping.

Grandma's Dollar Pancakes: Make little pancakes - great for the little ones!

Berry Lover’s Delight: Sprinkle a few blueberries and or raspberries on pancake as it is cooking.

Jack-o-lantern Special: Pumpkin pancakes. With one cup mix prepared as directed. Add ¾ c. cooked pumpkin, 2 T. brown sugar, l tsp. pumpkin pie spice, (¾ to l c. water) a little less than recipe. Don't rush them - they take a little longer to cook.

Banana Express: Add l mashed ripe banana, l tblsp sugar and ½ tsp cinnamon with each cup of mix. A few pecans sprinkled on the top will give a wonderful treat.

Quick apple pancakes: Add ½ cup applesauce, ½ tsp cinnamon and ¼ cup pecans, if desired.

Morning surprise: Adding bits of cooked ham, bacon or sausage. Fun to find and good to eat.

Delicious waffles: Fruit and whipped cream are wonderful. Yogurt with fruit is quick, easy, and healthy.

Pancake hint - After turning over the pancake on the griddle, let it cook and when you think it is done, tap on the top of pancake - it should feel silky, not crusty - this tells you when your pancake is done.


Apple Pancakes - kids love them - full of childhood memories

1 cup Golden Valley Pancake Mix
2 tblsp melted butter or oil
1 egg
1/2 tsp cinnamon, if desired
1 cup water
Apple, peeled and sliced in ¼ inch slices

Peel apple and slice. Mix pancake batter using rest of ingredients. With a little butter or oil on hot griddle, lay apple on griddle and let it begin to cook a little. Turn over and pour batter over apple. Cook pancake as usual.

Low Carb High Protein Pancake

In blender put:

1/3 cup cottage cheese
1 egg
2 tblsp Golden Valley Pancake Mix
1 tblsp cornmeal

Mix together and add a little water for pancake consistency. Cook on heated griddle. Eating healthy and good too!


Muffins

3/4 cup water
3 tblsp oil or melted butter
1 egg, beaten
1 cup Golden Valley Pancake Mix
3 tblsp sugar or 2-3 tblsp SPLENDA®, as desired
1/4 cup dried fruit and/or nuts, if desired

Heat oven to 400 degrees. Mix together water, oil, and egg. Add dry ingredients until moist. Add fruit or nuts. Pour in greased or paper lined muffin tin. Bake for 7 to 8 minutes for mini muffins; 15 to 18 minutes for regular muffins.


Oatmeal Apple Muffins

1 cup Golden Valley Pancake Mix
1 cup rolled oats
1 1/2 tsp cinnamon or apple pie spice
1/3 cup sugar or 1/4 cup SPLENDA® (or 1 1/2 tsp stevia powder)*
1 egg
1/4 cup oil or applesauce**
1 medium apple, peeled, cored, and coarsely chopped
1/2 cup raisins, optional
3/4 cup water

* more sweetener may be added if desired
** if applesauce is used instead of oil, pan should be greased much more to prevent sticking.

Blend dry ingredients together, add rest of mix. Pour into lined or greased muffin tins and bake at 400 degrees for 15 to 18 minutes. Mini Muffins bake for 9 to 10 minutes.


Fried Green Tomatoes using Golden Valley Pancake Mix

Use firm green tomatoes with no color change.
Slice 2 medium to large tomatoes into 1/4 inch slices.
Mix 1/2 cup Golden Valley Pancake Mix with 1/3 cup water.
Mix until smooth. A little more water may be needed if it sets a little.
Pour vegetable oil in frying pan to 1/8" deep. Heat to medium to medium high.

Dip tomatoes in mixture and place in hot oil.
Fry until both sides are golden brown. Place in colander to cool.
Season with salt and pepper, if desired.

Note: Add a bit of your favorite seasoning.

Fried Zucchini

Slice fresh zucchini, dip in beaten egg, and then into 1/2 cup dry Golden Valley Pancake Mix.
Fry in oil or butter until golden and done.


UNITED WHEAT STAND WHOLE WHEAT FLOUR RECIPES

Basic French Crepes - A friend shared this recipe. Crepes can be for meal time or dessert.

1 cup United Wheat Stand Whole Wheat Flour
2 cups milk
3 eggs
4 tblsp melted butter

Beat together flour, milk, and eggs. Add butter and let rest for 10 minutes. With a generous teaspoon of butter on griddle, pour about 1/4 cup batter and let it spread thin. Fry until bubbles appear and turn over briefly.

Ways to serve:

Pour on some maple syrup and roll
Put fruit filling in middle. Roll, and top with cream
Fill with fruit filling and cottage cheese
Eat as a savory crepe with vegetables or meat rolled inside and topped with your favorite sauce.
Asparagus with a cheese sauce

Crepes may be stacked with wax paper between and refrigerated for two days or frozen for up to three months. Thaw at room temperature for three hours.


Turtle Bread - look what two raisins can do!

Put 1 cup warm water in bread machine
1 tblsp oil or butter, softened
1 1/4 cup United Wheat Stand Whole Wheat Flour
1 1/4 cup bread flour or all purpose flour, plus 1 tblsp gluten
1 tsp salt
1 tblsp sugar*
1 pkg dry yeast
2 raisins

Place warm water in bottom of bread machine pan. Put in oil and then dry ingredients. Make a well in center of dry ingredients and put yeast in well. Turn on machine only. When machine stops, remove dough and knead four or five times. Shape a 2 inch piece of dough for the head. Shape 4 walnut size for feet, and 1 walnut size for the tail. Place the rest of the dough for the body and place on a greased cookie sheet. Attach the head, feet, and tail by placing one end of each under the edge of the body to secure. Press raisins into head for eyes. Cover and let rise. Heat oven to 400 degrees F. Make crisscross cuts on body 1/4" deep to make it look like a turtle shell. Bake for 20 to 25 minutes.

*Leave out sugar and this recipe would be good for bread sticks; optional - 1/2 tsp garlic powder and 1 tsp Italian seasoning to dry ingredients. Roll out dough to 1/2 inch thick. Drizzle with a little olive oil. Sprinkle with salt and pepper, or other seasoning if desired. Sprinkle with parmesan cheese. Cut into strips, Bake at 450 degrees for 6+ minutes or until lightly browned.

Apple Cheese - a southern dessert which will surprise your palate

In the bottom of a 9" x 13" greased casserole:

Peel and slice 6 to 8 cups of apples
Grate 8 oz. Velveeta Cheese and sprinkle over apples
Cream together:

1 stick of margarine
3/4 cup sugar or 1/2 cup SPLENDA®

Add: 3/4 cup United Wheat Stand Whole Wheat Flour
Sprinkle over apples. Bake at 350 degrees F. for 30-45 minutes.


Biscotti - This is especially good with the nutty texture of United Wheat Stand Whole Wheat Flour

1 2/3 cups United Wheat Stand Whole Wheat Flour
1 1/3 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
3/4 cup brown sugar
3/4 cup white sugar
1/4 cup butter or margarine
3 eggs
1 cup almonds
1 1/2 tsp anise

Mix flours, baking powder and salt together in a bowl. Set aside. In a separate bowl, cream together sugars and butter. Add one egg at a time and beat until fluffy. Blend in flour mixture. Add nuts and anise. Chill for at least 1/2 hour.

Roll or press dough into 3 inch rope on a greased and floured cookie sheet. Bake for 15 minutes at 375 degrees F. Slice diagonally into 1 inch sections while hot. Bake in oven for 5 minutes more. Let dry.


SCONE VARIATIONS

Country Style Peach Cobbler

Peel and slice peaches and fill 8" greased pan to 1 1/2" deep.

Blend:

3/4 cup Gorge Scone Mix*
3 tblsp melted butter
1 small egg
1/2 cup boiling water

Pour over peaches. Bake at 350 degrees F. for 25 to 30 minutes or until peaches are soft and lightly browned. Enjoy with cream or ice cream.

Scone variation: Mix 1/4 cup sugar*, 1 tblsp cornstarch and sprinkle over peaches.
Pour 1/2 cup boiling water over all.

*Diabetic variation: Substitute Aunt Teda's Sugar Free Scone Mix for Gorge Scone Mix and 3 tblsp SPLENDA® for sugar. Canola oil can be used instead of butter. During peach season nothing can beat cobbler - even for special diets.

Makes 12 servings.
